A couple of days ago, I was working on a ganache for some brownies. I did not have any heavy cream in the house so I substituted using 2% milk and butter. I melted 1 1/2 tbs of butter and mixed it with 1/4 cup of milk. To finish my ganache, I poured the warm mixture over my chopped chocolate (4 oz of semisweet). I covered it for about five minutes and then whipped it together. It worked really well and the ganache came out great. I thought that I would share this tidbit in case you find yourself without any heavy cream.
This sounds delicious! I hadn't heard of this substitute before, but it is definitely good to know!

I LOVE ganache and I LOVE people who MAKE ganache! I especially love the fact that A. I now can make my own (and LOVE me!) and B. I can call it "healthy" since I am avoiding the heavy cream! YOU my friend are WONDERFUL!

You posted back in 2011 and here it is May of 2014...but your substitute still works great. My brownies also needed the ganache and I was short on heavy cream, but your recipe stands the test of time !
