Parfaits--simple, tasty and elegant. What isn't to like about parfaits? I picked up some Vanilla Siggi's Skyr this weekend and thought it would be perfect in a parfait and was right!

For the parfait, I used my skyr, fresh blueberries and raspberries and my maple granola.
I layered the ingredients. Simple. Easy. No fuss. The skyr is pretty thick, so it looks beautiful in the parfait. Not runny at all--perfect!
A beautiful and healthy treat that looks way more decadent than it is. The vanilla bean added a nice flavor to the parfait The smooth and thick texture of the skyr really makes you feel like you are having a treat. Delicious!
What is skyr?
For those unfamiliar with skyr, skyr is a traditional Icelandic-style yogurt which is thick and higher in protein. Siggi's makes their skyr from an old Icelandic recipe using quality ingredients in New York State. The milk for siggi's skyr comes from local dairies. The cows are grass-fed and are growth hormone free. Additionally, siggi's uses all natural ingredients and lightly sweetens their products with cane sugar or agave nectar. Awesome!
