Last year, I decided to branch out from my usual round of holiday baking and tried Buckeyes. What a total success! My family could barely share them with anyone! Pretty easy, chocolate and peanut butter goodness! Here it goes:
Ingredients:
Filling:
1 cup creamy peanut butter
3 Tbsps of butter, softened
1 tsp vanilla extract
1 cup confectioner's sugar
Coating:
1 cup semisweet chocolate, chopped
1 Tbsp butter
Directions:
Line a cookie sheet or pan with wax paper.
Cut butter into peanut butter using a pastry blender. Then, mix in powdered sugar and vanilla extract.
Next, form mixture into little balls. We made 18 but number will vary based on desired Buckeye size. This will form your center. Place the balls on the lined pan/sheet, cover and put in fridge.
Start double boiler. Melt chocolate and butter. Once chocolate and butter are incorporated and mixture is smooth, remove peanut butter balls from the fridge and dip each in the chocolate.
Once dipped, place each ball back onto sheet. After all peanut butter balls are dipped and back on sheet, place covered sheet back into fridge to cool chocolate. After cooled, enjoy!
**Note: I do not have a chocolate dipper so I actually used a skewer to dip my peanut balls. Not perfect, but it worked! :)
