Red Gold is celebrating lasagna through February 3, 2015 and we are getting in on the fun with our new Mexican Lasagna Recipe!
Red Gold is one of our favorite companies to work with. They are family owned and have been since the 1940's. Plus, they are based locally in Indiana and focus on locally grown tomatoes in Ohio, Michigan and Indiana. What a wonderful Midwestern company!
Currently, Red Gold is sponsoring a fun Lasagna Party by sharing a variety of lasagna recipes. Of course, a great party has some type of prize right? Well, Red Gold is giving away six AWESOME Lasagna Kits worth $325 each through February 3. Each kit includes a Le Creuset Lasagna Pan, a Simple Gourmet Lasagna Kit, Red Gold spatula, Garfield Toy, coupons and an apron. I know, I know---I probably had you at Le Creuset! To enter, just head over to Red Gold! Additionally, Red Gold will be giving away 750 aprons. Who can't use another apron?
We are so excited that Red Gold asked us to join in their Red Gold Lasagna Party as well! We received a wonderful lasagna kit to use in making our own lasagna and are happy to announce that one lucky reader will win a kit as well! The kit includes tomatoes, lasagna noodles, coupons for Laura's Lean Beef, a reusable tote, an apron and recipes!
I have never used Laura's Lean Beef before, so I was interested in learning a little more about the company. Laura's Lean Beef focuses on healthy meals and does not include added hormones or antibiotics. Additionally, Laura's is committed to sustainable practices and humane treatment.
When I first received my lasagna kit, I wasn't sure what I should make. Then, it hit me--a Mexican Lasagna! I made one last night using the Red Gold Crushed Tomatoes and Laura's Lean Ground Beef and POW--what a great dish! My nine-year-old went out of her way to tell me how much she loved the lasagna. As all of us parents know, a stamp of approval like that is gold!
Here is my "golden" recipe:"
Mexican Lasagna
Ingredients:
1 28 oz can crushed Red Gold Tomatoes
1 lb Laura's Lean Ground Beef
12 small corn tortillas
1/2-1 block Monterrey Jack Cheese, cut into thin slices
1 small onion, chopped
1 can red kidney beans
1 tsp ground cumin
5-6 tsps chili powder
1/2 tsp ground coriander
2 tsps olive oil
Directions:
Preheat oven to 425.
Heat olive oil in skillet. Begin browning beef in skillet. Add onion, drained kidney beans, 4 tsp chili powder, 1/2 tsp cumin and 1/4 tsp coriander. Cook until beef is done and beans are cooked.
Mix can of crushed tomatoes, 1-2 tsps chili powder (based on taste), 1/2 tsp cumin and 1/4 tsp coriander in separate bowl.
In lasagna pan, layer 6 tortillas on bottom.
Then, spread beef mixture over tortillas. Next, spread tomato mixture over beef. Layer with cheese.
Cover with 6 tortillas. Spread remainder of tomato mixture over. Lastly, top with cheese.
Now, stick lasagna in oven and bake for 30 minutes. Remove from oven and voila!

My favorite lasagna is spinach, out of all types. I really don' t mind for meat types, but veggies are so delicious. I once had a white cream, veggie lasagna and that was so good. However, my family usually make at home spinach lasagna with spinach and the traditional lasagna recipe, seasoned with plenty of herbs and spices. Plus a simple use of chunky veggie style tomato sauce. It's our favorite! Great giveaway :) and love your Mexican lasagna creation, it looks delicious :).
